Baked Potato Soup

4 baking potatoes (about 2.5 lbs)

2/3 cup all purpose flour

6 cups 2% milk

1 cup reduced fat shredded extra sharp cheddar cheese, divided

1 teaspoon salt

1/2 teaspoon black pepper

1 cup reduced fat sour cream

3/4 cup chopped green onions, divided

6 bacon slices, cooked and crumbled

 

Preheat oven to 400 degrees.  Pierce potatoes with a fork. Bake at 400 degrees for 1 hour or until tender.  Cool. Peel potatoes.  Coarsely mash.  Discard skins. 

Lightly spoon flour into a dry measuring cup, level with a knife.  Place flour in a large Dutch oven, gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes).  Add mashed potatoes, 3/4 cup cheese, salt and pepper, stirring until cheese melts.  Remove from heat. 

Stir in sour cream and 1/2 cup onions.  Cook over love heat 10 minutes or until thoroughly heated (do not boil).  Sprinkle each serving with cheese, onions and bacon.

Baked Oatmeal

1 cup dry oatmeal

1.5 cup steel cut oats or regular oatmeal

1/4 cup ground flax (optional)

1/2 cup oat bran

2 tsp baking powder

1/2 tesp salt

1/2 tsp cinnamon

1/4 cup sugar

1/4 cup dark brown sugar

1/3 cranberries

1/4 raisins

1/4 chopped walnuts

 

2 cups milk

1 egg beaten

1/3 cup applesauce

1/4 cup canola oil

 Fresh chopped apple optional

 

Preheat oven to 400 degrees.  Spray a 2 quart casserole dish with cooking spray.  In a large bowl, combine the first 12 ingredients and mix.  In a small bowl, combine the last 4 ingredients and mix.  Combine all ingredients and place into the casserole dish.  Bake uncovered for about 20 minutes.  Remove from oven and stir in the chopped apple.  Bake, uncovered for another 20 minutes or until top is lightly browned. 

Can be refridgerated and eaten in small portions all week.  Makes 12 servings.  Compliments of Kelly Turpin.
